I was in such a crazy rush to post this morning’s blog post about how to cook greens in the Instant Pot that I forgot to mention that you absolutely do need water in the pot with the greens. I had a feeling that a lot of people wanted to know how to do it and I just wanted to get it out there but that was a mistake. Haste makes waste, right?

I also wanted to tell you about the strangest phenomenon.
I have been drinking half-caff coffee every morning for the past year (before that it was full-caff). I began eating steamed greens for breakfast four days ago. On day number three, it made me sick to my stomach even thinking about drinking coffee first thing in the morning. So I skipped it. I feared I would get a viscous headache but it never happened. So I skipped my morning cup of joe again on day number three, and you know what? No headache, no feeling of, “I have to have a cup of coffee to start my day or I think I will die.”
Am I really off coffee?
All that just from steamed greens for breakfast. I wonder what else is in store for me.
I also find myself making another whole batch of steamed greens every night with dinner. I will serve whatever soup or stew we are having over a bed of greens and either potato (sweet or yellow) or brown rice. It’s such an easy thing to do now that it’s no problem getting in a maximum amount of greens per day. I can’t believe it’s this easy and it has taken me so long to find out about it.
