I went totally out of my comfort zone on this one.
Not only did we make a video in my kitchen while Chef AJ was in Cleveland last week, I was in charge of the technology to make that happen.
Pretty funny.
But I really wanted to have this conversation about questions that I had about her Ultimate Weight Loss Program with AJ, and I wanted you guys to be able to be a part of that.
AJ insisted that we cook something as well, so I suggested that we make one of my all time favorite Chef AJ recipes–her raw marinara sauce–because I knew that I wanted to serve it over zoodles (zucchini noodles) at the pot luck that was happening just a few hours after this video was made. Not only that, I wanted to use the raw marinara sauce on some Sweet Potato Pizzas, which ended up being the hit of the pot luck!
Okay, okay, I know it’s a pretty raw video, but what can you expect from my first one? We enjoyed making it and I’m so happy to bring the content to you, because if you are still hanging with me on Healthy Girl’s Kitchen after all these years, what we are talking about just might really resonate with you.
In case you missed that Raw Sun-dried Tomato Marinara recipe from AJ’s book Unprocessed, I’m going to get you all the deets here today. Plus I’m going to tell you how to take that recipe and make a salt, oil and sugar free ketchup out of it for all of your tasty oven baked fries.
Chef AJ’s Quick Sun-dried Tomato Marinara
This sauce takes minutes to make but tastes like it was slow simmered for hours. The best part is, there are not pots to clean or vegetables to cut up.
1 cup oil-free sun dried tomatoes, soaked in water (include soaking liquid in sauce recipe)
3-4 fresh Roma tomatoes (approximately 12 ounces)
1 red bell pepper, seeded (approximately 8 ounces)
1 -2 cloves of garlic, peeled
3-4 pitted dates
one shallot (approximately 1 ounce) or red onion equivalent
3-4 fresh basil leaves
1/4 tsp crushed red pepper flakes, to taste (optional)
In a blender, blend all ingredients until smooth. If you prefer a chunkier consistency, use a food processor fitted with the “S” blade and process all ingredients until desired consistency is reached.
Serve over your favorite healthy noodles, such as those made from zucchini and carrots, with Faux Parmesan. If you have a high powered blender, you can make this sauce hot right in the blender.
