In living a healthy plant based lifestyle, I understand how overwhelming it can be to figure out your own tips, tricks and recipes with all of the information available on the Internet. We all read and hear about success stories, recipes and information but how do you make sense of it all?
I remember when I was new to the plant based world. I spent hours and hours in the kitchen each day, whipping up complicated recipes. I also spent a great deal of time looking at new cookbooks, Pinterest, and other plant based cooking blogs, searching and searching for something new and amazing.
I just don’t do any of that any more. I’ve simplified my taste buds and gotten out of that endless search for pleasure from trying out a new recipe. I’m much more of a batch cooker now, making my same tried and true dinner recipes month after month. I eat the same breakfast and the same lunch every day for months at a time. And do you know what? I’m REALLY satisfied!
That’s why I was so thrilled when my friend Kelley Williamson from Plant Based Kitchen, invited me to join an interview series around this topic. Chef Kelley teaches classes, has her own cooking school and cookbook and coaches individuals to unleash their inner chef to live and sustain a healthy plant based lifestyle. I am SO excited about this Wendy! Thank you for letting us know. Right now I am exactly like you were back in the day ~ I spend hours looking at Pinterest, cookbooks ~ I even created a FB list of my favorite wfpb bloggers (you included!) so I can keep up on all the new and yummy new recipes. lol . I recently joined the Engine 2 Seven Day Rescue (although didn’t start on the starting date so feel maybe I’ve missed something) and have loved the simplicity of making bowls. This summit looks fantastic! Gee, what will I do with all that time I used to spend on recipes? Thank you again Wendy ?
I am excited about the upcoming summit. I am very new to the Plant Based cooking. However, I have been enjoying getting the ingredients and cutting up vegetables . I too am constantly searching for easy and tantalizing recipes .
