I’m very excited to present you today with Episode #5 of The Healthy Girl’s Kitchen Taking the Stress out of Plant Based Living Podcast. My guest in this episode is my new friend Amy Johnson and the subject of this episode is plant-based diet weight loss and weight gain.
Amy Johnson, or as some people know her-“Mrs. Plant in Texas,” is a home chef living medication-free in the N. Dallas suburb of Frisco, Texas. She is a retired English teacher, and she is the mother of two sons in their 20s. Amy has been married to her best friend (Chris) for 27 years.
Before her journey, Amy was taking medication three times a day for Type 2 diabetes and high cholesterol, as well as struggling with severe osteopenia and obesity. After adopting a plant-based lifestyle, she has been able to get off her medications, FINALLY lose weight, and RUN! This in conjunction with visiting a Houston weight loss center could help her reach her weight-loss goals.
Not only has Amy’s entire nuclear family adopted the plant-based lifestyle, her sister and brother-in-law joined in shortly after.
Now, Amy spends much of her free time-sharing recipes, weight loss tips, and wisdom on her various social media accounts, and she also works directly with patients who have been diagnosed with dietary illnesses like obesity, hypertension, Type 2 diabetes, high cholesterol, etc. to prevent and reverse these illnesses through a whole foods plant-based lifestyle.
The highlight of this episode for me is hearing Amy describe the wonders of blood glucose monitoring, whether or not you are a diabetic, for weight loss. I have been waiting for the perfect way to introduce this subject here at Healthy Girl’s Kitchen, and I’m so glad that I waited! Amy was the perfect guest to explain to us how our insulin levels affect our ability to release fat and how each person can get direct evidence of how different foods impact each person’s blood glucose slightly differently. This is really powerful stuff that’s been instrumental in allowing me to release twelve pounds over the past seven weeks. You do not want to miss it.

Oh my god, Wendy, I can not believe how amazing that podcast was! I think the two of you touched on everything I’ve been going through in my plant based journey to weight loss. I’ve spent so much time feeling like a failure and agonizing over why I wasn’t losing, when in my heart I knew I was “following the rules.”
