Hey guys! I’m so excited to be back with another interview. This episode of the Healthy Girl’s Kitchen Taking the Stress Out of Plant Based Living Podcast features Will Kriski from Potato Strong.
I first heard about Will years ago when I began seeing all of the images of his comforting plant-based meals pop up all over social media. Viewing his giant plates of potatoes and rice on his Instagram feed, I quickly caught on to the fact that this guy loves his carbs! Who doesn’t?
So when my new friend Amy Johnson, Mrs. Plant in Texas, alerted me to this video on his YouTube channel where he lovingly probes David Goldman, a nutritionist from True North about the actual real benefits of Intermittent Fasting, I just knew that I had to reach out to Will and find out exactly what was up with him these days.
Spoiler alert: He’s working on building muscle now and considering changing the name of his business from Potato Strong to, well, something else. You can see a bit of an evolution to Will’s food if you spend some time on his Instagram feed and go back to older posts.
When Will lost 40 lbs and lowered his cholesterol to 112 mg/dL he decided to start sharing his simple, comfort food recipes, weight loss advice, expert interviews, and veganic gardening methods with the world.
Will was pleasantly surprised to find that his simple, low-key approach resonated with people and he quickly developed tens of thousands of loyal fans online.
Now don’t get me wrong here. I’m not saying that Will is not still a big fan of the spuds. It’s just that he’s evolving out loud, just like someone else you guys know intimately. 😉

What an excellent podcast, love Will! I have always been a calorie counter, it’s what has always worked. I’ve combined that with a plant based diet.
